Shrimp Scampi
I am an island girl through and through. I grew up in the muddy creeks making pluff mud pies and “skin moisturizer”. One thing that growing up on an island taught me is that fresh seafood always tastes better than the store-bought stuff. During shrimp season, we always stocked the freezer full of shrimp. I have even convinced my husband that store-bought (or restaurant served) seafood just does not taste that good. I have taught him how to throw a cast net and fish in salt water. But most importantly he now understands why I like fresh caught seafood over what restaurants serve. Currently we have a freezer full of shrimp and last night I made shrimp scampi.
Ingredients:
Spoonful of butter
Drizzle of EVOO or coconut oil
Splash or two of white wine
Splash of lemon juice
1 Garlic clove minced (or garlic powder)
Fresh or frozen veggies. I use zucchini, onions, broccoli and/or green beans
Shrimp – I keep a bag of frozen shrimp from Sam’s ($1.40/serving) in the freezer when we run out of fresh shrimp.
Penne pasta 0.20/serving
Seasonings – basil, parsley, Italian seasoning
Recipe:
Boil pasta.
While pasta is boiling, in a large skillet combine the first 7 ingredients. Cook until veggies are tender and shrimp are fully cooked.
Drain pasta and mix into skillet with shrimp mixture. Add seasonings.
